Evaluation of the nitrates in processed meat products sold in Bangkok and Chiang Mai, Thailand

Abstract

Nitrate or nitrate salt plays a vital role in preserving processed meat by preserving its red color and acting as an antimicrobial agent, thereby extending its storage period. The dosage of nitrate is a determining factor in its potential to either provide benefits or become toxic. Excess nitrate can cause tissue oxygen deficiency, anemia, and central nervous system damage, including myocardium or cancer.  In Thailand, the acceptable threshold for nitrate concentration in processed meat is restricted to 500 mg/kg.
        The objective of this study was to examine whether the processed meat sold in markets located in Bangkok and Chiangmai, Thailand. We identified the presence of nitrate in 100 processed meat samples through the utilization of the GT-Nitrate Rapid test kit (Bsmartsci, Thailand).
          The findings indicate that a mere 3% of processed meat may have surpassed the permissible threshold for Nitrate. Our findings indicate that the processed meat available in the markets surrounding Bangkok and Chiangmai, Thailand, is considered to be safe. Nevertheless, this study employs the rapid test method to screen for nitrate levels in processed meat. Hence, it is imperative to employ the conventional techniques to validate the findings
