Development of Nutritional Education Media for Food Serving Trays in Hospitals

Background: Foodservice using food serving trays in hospitals is still commonly used today. Nutrition education media that might help patients understand how to eat according to nutritional principles and dietetics, tailored to their specific disease conditions, can aid in improving their health and enhancing their response to medical treatment.
Objective: This study aimed to design nutrition education media for food serving trays used in hospitals and to evaluate the accuracy of the content and user satisfaction.
Materials and methods: This descriptive study aimed to develop nutrition teaching materials for food serving trays by systematically reviewing the literature. It had four main objectives: 1) improving patients' nutritional status during hospitalization, 2) providing knowledge to caregivers who are either illiterate or lacking an understanding of food and nutrition, 3) offering dietary and nutritional advice to help reduce blood sugar and fat levels while controlling sodium intake, and 4) presenting examples of foods that patients can safely consume, along with information on foods to avoid. The content validity and user satisfaction were assessed by 20 nutritionists and dietitians at the hospital.
Results: All three types of nutrition education media—nutritional teaching media for diabetes, media on unhealthy nutrients, and media on healthy food choices—received high average scores in various aspects, including the following: the materials can effectively educate patients, the fonts are appropriately sized, colored, and easy to read, and the materials are suitable for use. The average scores were 4.9±0.1, 4.8±0.1, and 4.7±0.2, respectively.
Conclusion: The nutrition education media which were developed can be effectively used for patient education.
