Evaluation of Nutrition Project for Nutrition Education Enhancement among Baccalaureate Nursing Students in Boromarajonani College, Sanpasithiprasong

Abstract

Objectives: To examine the effects of nutrition education program among baccalaureate nursing students.

Methods: This study is a project evaluation. Ten nursing instructors in pediatric nursing department, 85 first-year baccalaureate nursing students, and 120 project participants were selected in this study. A project meeting plan developed by a researcher based on CIPP MODEL, and the opinion of nutrition education program were used to collect data. Descriptive statistics and content analysis were used to analyze data.

Results: The study showed that foundation and rationale, objectives, and program plan were relevant to the aims of a nutrition course. Elementary factors, process factors were suitable with the course aims. No problems and obstacles were found in program accessibility. Outcome factors: 1) The program met the outcome indicators and educational accreditation indicators; 2) Students accomplished the learning outcomes and could create learning plan, produce brochure, and set up nutrition education project. The students’ opinion about teaching style was at a good level. (χ =4.36, SD=.68); 3) The program was a good guideline for developing in students; 4) The participants’ opinion about setting up nutrition education project was at a good level (χ =4.26, SD=.47); and 5) all relevant nursing instructors were agreeing in continuing this project.

Conclusion: The result of this study can be used as a guideline for instructors to develop a learning style of nutrition course. This learning style helps students to learn effectively and achieve the course objectives. The learning style also helps students to understand the content of nutrition course, produce the brochure of nutrition education, and set up nutrition projects.
