การพัฒนาศักยภาพชุมชนในการจัดการหมู่บ้านอาหารปลอดภัย

Abstract

บทคัดย่อ

การศึกษาครั้งนี้ มีวัตถุประสงค์เพื่อพัฒนาศักยภาพของชุมชนในการจัดการหมู่บ้าน อาหารปลอดภัย โดยกระบวนการวิจัยเชิงปฏิบัติการแบบมีส่วนร่วม กระบวนการพัฒนาเริ่ม จากการจัดเวทีเสวนา สถานการณ์ปัญหาสารเคมีตกค้างในอาหารสดที่มีอยู่ในชุมชน และ ประเมินผลกระทบทางสุขภาพที่เกิดจากการบริโภคอาหารที่ไม่ปลอดภัย หลังจากนั้นได้ร่วม กันกำหนดแนวทางในจัดการหมู่บ้านที่มีอาหารปลอดภัย ทำการศึกษาในหมู่ 19 บ้านเกษแก้ว ตำบลแม่ข้าวต้ม อำเภอเมือง จังหวัดเชียงราย ระหว่างเดือนตุลาคม 2553-กรกฎาคม 2554 เครื่องมือที่ใช้ในการรวบรวมข้อมูลผลกระทบทางสุขภาพ ได้แก่ แบบสอบถาม ควบคุมคุณภาพของเครื่องมือโดยผู้ทรงคุณวุฒิตรวจสอบความตรงเชิงเนื้อหาและหาค่า ความเชื่อมั่นของแบบสอบถามได้ค่าสัมประสิทธิ์แอลฟาของครอนบาคเท่ากับ 0.84 และ รวบรวมข้อมูลเชิงคุณภาพ ในการจัดกระบวนการพัฒนาศักยภาพโดยใช้การบันทึกรายงาน วิเคราะห์ข้อมูลโดยการสรุปเนื้อหาและสถิติเชิงพรรณนา

ผลการวิจัยพบว่า

กระบวนการพัฒนาศักยภาพ โดยการจัดเวทีเสวนา เป็นกิจกรรมที่ปรับแนวคิดด้านสุขภาพ ทบทวนแลกเปลี่ยนเรียนรู้ร่วมกันระหว่างชุมชนกับผู้ที่เกี่ยวข้อง ทำให้เกิดความตระหนักถึงปัญหา และกำหนดแนวทางการจัดการหมู่บ้านอาหารปลอดภัยไปในทิศทางเดียวกัน เป็นการเสริมพลัง อำนาจ ด้านองค์ความรู้ให้แก่ชุมชนที่จะควบคุมการผลิตอาหารที่ปลอดภัย ก่อให้เกิดความเข้ม แข็งของชุมชน อันเป็นภาพที่แสดงออกถึงศักยภาพของชุมชนในการดำเนินการที่เป็นประโยชน์ ต่อส่วนรวม

Abstract

The purpose of this study was to enhance community capacity in managing food safety village using participatory action process. The process started from using community forums to enhance community engagement in situation analysis on chemical contaminants and residues in foods and their impacts on human health. Subsequently, the guidelines for food safety management were mutually set. The study was conducted in Moo 19 Ban Kedkeaw, Mae Khawtom Sub District, Muang District, ChiangRai during October 2010-July, 2011. Data collection tool consisted of the Health Impact Questionnaire was content validated and tested for reliability in which the Cronbach’s Apha was .84. In addition, qualitative data was collected by fi eld notes in order to gain insight into process of enhancing community capacity. Descriptive analysis of qualitative data and Descriptive statistics were used for data analysis.

The results of study

The utilization of community forums in this study served as an action for modifying the community’s health perception as well as verifying and sharing knowledge resulting in community’s mutual goals, raised problem awareness and guidelines for food safety management. Furthermore, the study process took steps towards empowering the community in order to promote safety food production and consumption. At the end of the study, the community strength was revealed as indicated by the capacity of community in working together to achieve a common goal.
