Development of Northern Thai Food Preparation Knowledge Package for Persons with Diabetes Mellitus

Abstract

Dietary management is the most significant method to control blood sugar level for people with diabetes. The aims of this research and development were to develop Northern Thai food preparation knowledge package for persons with diabetes mellitus; to assess possibility to apply Northern Thai food knowledge package to persons with Diabetes Mellitus; and to compare knowledge test scores before and after using knowledge package for persons with diabetes mellitus based on a participatory model (Kolb, 1984). The concept of participatory learning is an experiential learning and group process. The research divided into three phases: situation analysis; Implement; and evaluation phase.

        The samples were selected based on purposive sampling. In the situation analysis phase, 16 selected samples were divided into two groups included eight village health volunteers who specialized in Diabetes Mellitus and eight persons with Diabetes Mellitus, and thirty-two persons with Diabetes Mellitus on operation and evaluation phase. The study instruments included the following parts: general questionnaire, structured interview questionnaire, group discussion questionnaire, possibility to apply Northern Thai food knowledge package to persons with diabetes mellitus questionnaire, Northern Thai food management for persons with diabetes mellitus evaluation form, and Northern Thai food preparation knowledge package for persons with diabetes mellitus including Northern Thai food recipes and guide book “Healthy Diabetes local food recipes”.

        The result of this study showed that:

        The comparison of the knowledge of persons with diabetes mellitus one month before and after using the Northern Thai Food Preparation Knowledge Package. After using the knowledge package, statistical significance was found (p<.05), more than before using the knowledge package. The result of assessing the possibility to apply the Northern Thai food knowledge package to persons with Diabetes Mellitus after one-month usage, showed that a high proportion (87.5%) of the persons with diabetes mellitus comment that the knowledge package was easy to use. They also report the following, with the figures very favourable to the study: 90.6% for content clarity, 87.5% for cooking and frequency, 90.6% for appropriate application, 81.3% for food purchase and supply and preparation, and 87.5% for the possibility of applying in practice.

        Suggestions for this followed: the knowledge package can be developed and apply to communities in the Northern part of Thailand.
