Raising Production Standards of Rice Noodles in Suratthani Province

Abstract

This action research aimed to develop and evaluate Rice Noodles production sites following the good manufacturing practice (GMP 420) and the 5S activities. This study consisted of the situation, designing development methods by entrepreneurs and government workers, developing rice noodles production sites, and evaluation using criteria of GMP420, 5S activities. In addition, rice noodles were both microbiological tested and chemically tested. Sixteen respondents were entrepreneurs of rice noodles production sites. Pre-test and post-test were conducted at baseline and twelve month, respectively

The results found that the development method of rice noodle sites included 1) notifying the result of the evaluation to entrepreneurs, 2) producing the manufacturing, 3) monitoring and consulting 4) setting up the online communication, and 5) developing the following 5s activities. After the end of the development process, the average score of rice noodle sites using GMP 450 was significantly higher (p-value < .05) in every topic. However, 3 of 16 (18.8 per cent) rice noodle sites passed GMP 450 criteria. The average score of rice noodle sites using 5S activities was significantly higher (p-value < .05) in shine, standardize, and sustain topics. In addition, all of the samples of rice noodles were safe.

The development method designed by participatory entrepreneurs and government workers influenced the raising of the standard of rice noodle sites. All of them should be developed following 5S activities as the priority. However, GPM 420 was suitable for large rice noodle sites.
