The Effect of a Food Literacy Promotion Program on Eating Behaviors among Adults at Risk of Hypertension

This quasi-experimental study employed a one-group repeated-measures design with assessments conducted before the intervention and at weeks 1, 4, and 8 after the intervention. The objective of this study was to compare dietary behavior scores before and after participation in a food literacy promotion program among adults at risk for hypertension. The sample consisted of 30 adults at risk for hypertension who resided in the service area of Tha Uthae Sub-district Health Promoting Hospital. Participants were selected using a simple random sampling technique based on the inclusion criteria.
The research instruments included a questionnaire and a food literacy promotion program designed to improve dietary behaviors among adults at risk for hypertension. The intervention was implemented over a period of 8 weeks. The instruments were validated by three experts, yielding a Content Validity Index (CVI) of .84. The dietary behavior questionnaire demonstrated a reliability coefficient of .83.
Data were analyzed using descriptive statistics and One-way Repeated Measures ANOVA. The findings revealed that after participating in the program, the participants had significantly higher mean dietary behavior scores than before the intervention (p < .001).
