Acceptance of Egg White (Albumin) Menu Among Cancer Patients Admitted At UdonThani Hospital

Abstract

                  The study was cross-sectional descriptive research. The object was to assess food acceptance in egg white (Albumin) recipe among the cancer patients age > 20 year old admitted at UdonThani Hospital. Eighty patients were recruited. The data were collected using questionnaires on January 2014. Data were analyzed using a statistical program, STATA version 10.0 and presented as percentage, mean, median and standard deviation.

                 The results revealed that 51.3 %. Mean while, 92.5% of the cancer patients were diagnosed for over 1-2 years ago, 95.0% were stage 1, 71.3% had got knowledge about cancer, 78.9% have got knowledge from medical / nursing / nutritional staff., 38.7% had daily consumption of white eggs. Regarding nutritional status, the patients were classified as normal 55%, overweight 21.3%, obese 15.0 % and underweight 8.7 %. About consuming the hospital’s egg white dishes, the patients satisfied most in terms of cleanliness with mean ± SD equaled to 4.8±0.4. When assessing knowledge on hospital diet of cancer patients, it was found that 90 % of the patients had high level of knowledge. Regarding attitude toward hospital diet the patient had good level (over 80% of the patients strongly agree). However, the patient had a bad attitude on the issues such as red meat is not a forbidden food for cancer patients. Variety menu of egg white should be provided and the efficient method of nutrition education on food for cancer patient in order to reduce malnutrition.
